Thanks to its soft texture, tofu can also be easily blended and made into a cream. It is an excellent ingredient for making delicious sauces and condiments for pasta, such as vegan pesto: start from the classic recipe, with basil, extra virgin olive oil, garlic, pine nuts and walnuts, and use a few cubes of tofu instead of grated cheese. Or you can finely blend it with boiled courgettes and mint for a delicious sauce with which to season spaghetti press tofu .
Natural or flavored with a teaspoon of nutritional yeast, and blended with a tablespoon of water, it becomes the ideal filling for savory pies, to be completed with your favorite vegetables. If, on the other hand, you prefer a cream to accompany side dishes , or to spread on bread, sandwiches and croutons, blend the tofu stick with capers, dried tomatoes or pickled vegetables, adding a little water to obtain a homogeneous consistency. Then keep your tofu cream in the refrigerator, in a glass jar: you will have an excellent substitute for industrial sauces.
Another easy way to enjoy this food is scrambled tofu : blanch the tofu stick in water for a couple of minutes, then drain and mash it with a fork. Sauté it in a pan with extra virgin olive oil, a pinch of turmeric and a tablespoon of vegetable milk: it will really look like scrambled eggs! And if you want to recreate the taste too, season the scrambled tofu with a pinch of kala namak salt, with a slightly smoky flavor with notes of sulfur, which is very reminiscent of the aroma of eggs.
